Simply & Tasty Rice Balls

This recipe is really simple, but so yummy! The ingredients are 100% whole food and contain quality nutrients, with a balanced ratio of carbohydrates, proteins and fats. The nutritional yeast provides a good amount of B vitamins and, coupled with the olives, makes the balls really flavorful!

Serving: about 35 balls

Dr. Danielle Simply and Tasty Rice Balls

Ingredients 

8 oz whole grain rice (Basmati or Thai)

2 cup vegetable broth (unsalted)

½ tsp fine salt

2 oz black pitted olives

5 tbsp nutritional yeast

Directions

Step 1 

Wash the rice and cook it together with the vegetable broth and salt until it has absorbed all the liquid. In the meantime, cut the olives into small pieces.

Step 2

Using a hand blender, puree half of the rice while it is still hot. With the rice is still warm (but not too hot, to be able to manipulate it without getting burned) add the olive chunks and nutritional yeast, then mix well.

Step 3

Paying attention to keeping your hands wet, form the balls with about a tablespoon of mixture each time.

Step 4

Bake the rice balls in a 375°F convection oven for about 20 minutes.

Pro Tips:

  • Rice balls can be stored for 3 days in the refrigerator, even as a mixture, and for 3 months in the freezer (already formed).
  • They are delicious with Veggie Mayo.
