Savory Arugula Pesto

Arugula is a plant that can be found in its wild state as well as cultivated. It has a very strong flavor, which works well in some dishes that need to be flavored. Arugula is rich in fiber and has a powerful anti-inflammatory and antioxidant action; it is rich in micronutrients such as calcium, potassium, folate, and vitamins A and C. Cashew nuts contain interesting minerals, such as zinc and selenium, as well as vitamin E and monounsaturated and polyunsaturated fats. The amount of extra virgin olive oil in this pesto is minimal and optional.

Servings: 4

Ingredients 

5 oz arugula (wild and/or cultivated)

4 oz cashew nuts (unroasted and unsalted)

2-3 tbsp of extra virgin olive oil

Directions

Step 1 

Soak cashews in lukewarm water for at least 2 hours.

Step 2

Clean and wash the arugula leaves, cut them into pieces and place them in a blender, along with the drained cashews.

Step 3

Blend the mixture so that everything is finely chopped. Add the extra virgin olive oil and blend again. You can use it immediately or store it in the refrigerator for up to a week.

Pro Tip

This dressing can also be stored in the freezer for months, taking care to portion it out.
