This fresh, easy, and colorful summer salad is great for entertaining. Let's be honest, its hard to go wrong with watermelon and feta. That little bit of salty feta helps pull out the rich sweet flavors in the watermelon. You can also easily adjust the amounts used to accommodate your party size.
When selecting a watermelon, look for one that feels heavy for its size and also has a large yellow spot on it. When watermelons are allowed to ripen on the vine, the yellow spot forms (the darker the better) from them sitting on the ground longer. I personally like the smaller melons as they are easier for me to cut up, but any watermelon works.

Ingredients
- 1 mini watermelon chopped into bite size pieces
- 1 large cucumber
- 2 tablespoons freshly chopped basil
- 2 tablespoons freshly chopped mint leaves.
-1 tablespoon olive oil
-1/2- 1 tablespoon balsamic vinegar (everyones taste buds are a little different.)
- Feta chunks or crumbles to taste (I use around 1/2 a cup)
-Salt and pepper to taste
-Lime wedges for garnish

Dressing
Step 1
In a small mason jar, add olive oil and balsamic vinegar. Apply the lid and shake well. Sample your dressing and add more olive oil or balsamic accordingly. Most people have their own preference when it comes to vinegar.
Salad
Step 1
In a large mixing bowl, combine the watermelon, cucumber, feta, basil and mint. Mix well.
Step 2
Add dressing to taste, making sure to mix the ingredients well. Feta can be salty so make sure to sample before adding more salt or feta to the salad. Salt and pepper to taste. Serve with a wedge of lime.
