Saffron is a spice high in antioxidants, which gives this rice a beautiful golden color. It has been linked to many health benefits and with this recipe it is quite easy to add it to your diet. The Prosecco (a white dry sparkling wine) provides an aromatic background and enhances the flavor of saffron, without using any added fat.

Ingredients
- 6 oz wholegrain rice (Thai or Basmati)
- 0.2 oz saffron powder
- 1 cup vegetable broth (unsalted)
- ½ cup Prosecco wine
- 1.3 oz fine salt
- 2 tbs almond grits
- 2 tbs raisins
Directions
Step 1
Soak raisins in warm water. Rinse the rice under running water to remove any dust and excess starch, then lightly toast it in a large pot. When the rice is dry and hot, pour in the Prosecco and let it evaporate while stirring.
Step 2
Add the salt and vegetable broth and bring to a boil. Let it cook for about 10 minutes. Meanwhile, dissolve saffron in a little hot water, then add it to the cooking rice.
Step 3
Cook for another 10 minutes. Add the soaked raisins and cook another 5 minutes about. Serve sprinkling each portion with almonds.
Pro Tip
If you do not have Prosecco wine or do not want to use it, the recipe is still delicious.
