This is a juice disguised as a mocktail, to bring health to holiday banquets while preserving taste and cheerfulness. Nutrients in pineapple, clementines and ginger promote digestion and are packed with a high content of vitamin C, anti-inflammatory substances and antioxidants.
Serving: about 3.5 cups of juice
Ingredients
- 33 oz ripe pineapple
- 27 oz clementines or mandarins
- 2 inches ginger root
- ½ tbs coconut flour
- ½ tbs coconut sugar
- some mint leaves
- some pomegranate kernels
- a slice of lemon or lime
Directions
Step 1
Peel and dice the pineapple. Peel the clementine fruits and the ginger root. Juice the fruit and the ginger with a slow juicer or a centrifuge.
Step 2
Put the coconut flour and the coconut sugar in a small plate and mix them. Wet the rim of a glass where you will put the juice, then press it onto the plate so that the powder adheres.
Step 3
Fill the glass with the juice, decorate with the lemon slice, mint leaves and pomegranate kernels.
Pro tips
For a more bubbly effect, you can add some sparkling water.
The pineapple core is rich in the beneficial bromelain: juice it, too.
The slow juicer preserves more nutrients in the juice than centrifuge.
