- 2 cups pumpkin puree (not pumpkin pie mix) or simmered kabocha pumpkin
- 2 cloves garlic
- 2 tsp. curry spice
- 1 cup vegetable broth
- 1/2 onion, chopped
- 1/2 avocado
- 1/2 cup coconut milk
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cumin
- 1/4 tsp. chili powder (optional for a little kick)
- Salt and pepper to taste
- Pumpkin seeds (optional for garnish)
Using a high speed blender, add all ingredients. Start at a low speed and gradually work to a high speed. Blend until a creamy consistency, adding more vegetable broth if needed.
If your blender has a soup function, it will often heat the content for you. If not, add the blended mixture to a soup pan and warm over medium heat.
Serve immediately. Garnish with pumpkin seeds if desired.
