In this tiramisu recipe, all the unhealthy ingredients have been replaced to make a delightful dessert that is also healthy. Tofu and yogurt provide plant-based protein; coconut flower sugar contains B vitamins and many beneficial minerals; chicory coffee is caffeine-free and can improve your digestive health. But most importantly, this dessert is really, really delicious!

Ingredients
- 14 oz silken tofu
- 4.5 oz coconut or soya yogurt (unsweetened)
- 5 tbs coconut flowers sugar (or regular coconut sugar)
- 1 tsp vanilla powder
- 9 oz of your favorite healthy cookies (my choice is fairtrade chocolate cookies)
- 1.25 cups chicory coffee
- 6-7 tbsp hazelnut crumbs 3 tbs cocoa powder
- 5 -1 cup cylindrical glasses
Directions
Step 1
Crumble the cookies into an even small size. Cover the bottom of the glasses with a layer of cookies about ½ inch thick. Drizzle the cookie layer with 4-5 teaspoons of chicory coffee.
Step 2
To make the cream, place the silken tofu, yogurt, coconut sugar and vanilla in a bowl. Use an immersion blender and blend until smooth.
Step 3
Assemble the tiramisu by adding to each glass, in the following sequence:- 2 tablespoons of cream
- A sprinkle of cocoa
- A little bit of chopped hazelnuts
Step 4
For each glass, restart with the crumbled cookies and make a second layer of each ingredient:
1- crumbled cookies
2- chicory coffee
3- tofu cream
4- sprinkle of cocoa
5- hazelnut crumbs
Refrigerate for two hours before consuming.
Pro Tip: The next day it tastes even better!
