This is a gourmet recipe that is also simple and low-fat. If the strawberries are tasty, the flavor of this rice is quite special and intense. The Prosecco (a white dry sparkling wine) boosts the fruity notes by providing an aromatic background. All without using any added fat.
Serving size: 2
6 oz. wholegrain rice (Thai or Basmati)
8 oz. strawberries
1 cup vegetable broth (unsalted)
½ cup Prosecco wine
1.3 oz salt
Rinse the rice under running water to remove any dust and excess starch, then lightly toast it in a large pot. When the rice is dry and hot, pour in the Prosecco and let it evaporate while stirring.
Add the salt and vegetable broth and bring to a boil. Let it cook for about 15 minutes.
Meanwhile, clean and wash the strawberries. Blend half of the strawberries and cut the other half into small pieces.
Add the blended strawberries to the rice and cook for another 10 minutes. When the rice is cooked, turn off the heat, add the chopped strawberries, stir, and serve.
If you do not have Prosecco wine or do not want to use it, the recipe is still delicious.
