Creamy Vegan Pumpkin Soup

Ingredients

  • 2 cups pumpkin puree (not pumpkin pie mix) or simmered kabocha pumpkin
  • 2 cloves garlic
  • 2 tsp. curry spice
  • 1 cup vegetable broth
  • 1/2 onion, chopped
  • 1/2 avocado
  • 1/2 cup coconut milk
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cumin
  • 1/4 tsp. chili powder (optional for a little kick)
  • Salt and pepper to taste
  • Pumpkin seeds (optional for garnish)

Instructions

Step 1

Using a high speed blender, add all ingredients. Start at a low speed and gradually work to a high speed. Blend until a creamy consistency, adding more vegetable broth if needed.

Step 2

If your blender has a soup function, it will often heat the content for you. If not, add the blended mixture to a soup pan and warm over medium heat.

Step 3

Serve immediately. Garnish with pumpkin seeds if desired.
